Rabbit food. This is what my father calls vegetarian cooking and cuisine. Salads and vegetables - couldn't be more, right? Oh, but there it is. Vegetarian cooking is at least as diverse as 'regular' cooking - and in some cases, far more imaginative.
Nearly thirty years ago, Diet for a Small Planet and the follow-up cookbook, Recipes for a Small Planet, hit bookstore shelves with a resounding rumble that still resonates. Although many of the protein supplement theories put forth by Francis Moore Lapp have been proven fool proof by further research, the basic principle of eating and the wonderful meatless - and indeed vegetarian - dishes endure. The Moosewood Cookbook and The Enchanted Broccoli Forest followed, and then an avalanche of cookbooks devoted to vegetarian food.
Vegetarian cooking is much more than just 'meatless'. There is an art of blending flavours and textures in the right combination to create tempting masterpieces for non-vegetarians who eschew meat. For Hindi cooks practicing Ayurvedic cooking, food is more than nutrition – it is a meditation, a gateway to higher consciousness. Three main ingredients and six tastes (sweet, salty, sour, bitter, bitter and astringent) should be considered in making each dish and the food prepared according to Ayurveda is eyes, nose, mouth and mind.

The best vegetarian diets are 'meatless' versions of food that usually contain meat. 'Meatless' lasagne shows that something is missing in the recipe. It is a way of eating and cooking, spices and combinations that can be light and fluffy like meringue or can be thickened and chewy as in the best seven-grain bread. If you've never tried a true vegetarian diet - as opposed to 'meatless' or 'meat substitute' - the best place to start is at your nearest Indian or Middle Eastern restaurant. You'll be amazed at the taste and texture—and you won't even notice that there's no meat.
